Harvesting woodland fruits and truffles is more than a productive activity—it’s a true ritual, one that unites people and environment, rooted in days spent among winding trails, mossy ground, and centuries-old trees. Only those who truly know the forest can recognise its finest gifts. The gathered treasures are meticulously hand-selected and processed through strictly artisanal methods, preserving their flavours, aromas, and nutritional value.
But Alto Molise’s natural wealth doesn’t end in its woods. The high mountain meadows, rich in wild herbs, offer ideal grazing grounds for cattle. The milk produced in this pristine environment is wholesome and nourishing and is transformed following ancient techniques into cheeses with a bold, intense flavour that reflect the land’s true character.
Cured meat production is also deeply rooted in this area: pigs raised outdoors, following the rhythm of nature, provide the base for premium cold cuts, slowly aged in old stone houses, where the warmth of wood-burning fireplaces and the natural humidity create perfect conditions for maturation.
