Originally a small workshop, it has grown into a modern facility of about 500 square meters, capable of processing up to 3,000 liters of milk per day. Its growth has been driven by a single goal: to offer fresh, genuine dairy products made from the highest-quality milk, sourced exclusively from controlled local farms.
The dairy processes milk daily, adhering to the HACCP self-control system and strict hygiene and sanitary standards. The range of dairy products is broad, including fresh pasta filata cheeses such as stracciata, treccione, laccetti, bocconcini, and fresh scamorza, as well as aged cheeses like caciocavallo, an authentic symbol of Molise’s tradition.
Since 2007, Caseificio Pallotta has proudly carried the “Italialleva” certification, a guarantee to consumers that the milk comes exclusively from the Altissimo Molise region. This recognition is awarded by the Provincial Association of Farmers of Campobasso (APA) in collaboration with regional health authorities, confirming the ongoing commitment to a short, transparent, and traceable supply chain.
