Truffles are a world-renowned gastronomic excellence. However, how many people know that Molise is one of the largest producers nationwide? And how many really know how it is harvested? Truffle hunting, truffle hunting, is a unique experience that reaches its peak in Molise: about 40 percent of Italian truffles are harvested here, making the region a true truffle land.
Perfect raw on noodles, in carpaccio, sauce or minced, the truffle lends itself to a thousand recipes. Before savoring it, however, it must be found!
The truffle hunting and tasting experience is offered by the company “Di Iorio Tartufi” of Busso (CB). The appointment is at 10:00 am at the company located at the entrance of the village. After a welcome coffee in which the origin, history and curiosities regarding the prized mushroom are explained, we move on to a tour of the truffle museum.
Now you are ready, you have all the information to go truffle hunting. Not alone though. Accompanying you will be the real protagonist, the lagotto romagnolothe truffle dog par excellence with its trainer. Aboard your own car you will reach a nearby forest, where the faithful ally shows off his talent for searching.
Great is the surprise when he starts digging and immediately you have to join him to admire the gem he has found. A bravo, a crunch and you start again until he feels like it or gets tired.
Back at the farm, we visit the production and treatment workshop before an irresistible tasting: truffles on cheeses, bruschetta, sliced meats, eggs and noodles. Lunch is well-deserved and a time for sharing among participants who, at the end, can return satisfied and satiated.
