Agriturismo & B&B da Carlo

Ristorante Da Carlo was established in 1997, offering daily dishes typical of Molise’s rich culinary tradition and receiving great appreciation from its loyal customers. However, the management always had a broader ambition that eventually led to a significant evolution and expansion.
In 2011, the restaurant transformed into Azienda Agrituristica Da Carlo, with the primary goal of serving dishes prepared almost exclusively with high-quality products from its own production. This change marked an important step toward valuing short supply chains and the quality of raw materials.
At the same time, the company began an in-depth study of traditional Molisan recipes, food preservation methods, bread-making processes, and the ancient dietary customs of the region. This strong commitment led to the dissemination and sharing of knowledge through seminars and practical courses open to all, aimed at preserving and passing on the rural food culture handed down over generations.
The courses cover topics related to respecting natural resources and enhancing everything nature provides, actively opposing the growing industrial trend of “Food Factory.” Azienda Agrituristica Da Carlo thus promotes the culture of good food based on principles of sustainability, authenticity, and tradition, offering a genuine gastronomic experience that combines taste, quality, and respect for the territory.
