The organic farm Terra Madre is located between the towns of Fossalto and Salcito, in the heart of Molise and the Parco delle Morge. Nestled in a sunny, hilly landscape, the farm cultivates primarily cereals, along with extensive orchards, olive groves, and vegetable gardens. Its origins date back to the 19th century, with a history deeply rooted in both agriculture and transhumance.
In 2012, a generational shift marked a significant transformation. The farm evolved from a cereal-focused operation into a multifunctional enterprise. A former storage barn was restored and repurposed as the farm’s main headquarters and processing laboratory. Ancient grains suited to organic farming, such as spelt (farro), Senatore Cappelli durum wheat, Agostinello corn, and Genziana oats, were introduced alongside traditional Molisan legumes.
Diversification expanded with the creation of a 10,000-square-meter berry orchard—one of the largest and most diverse in the region—featuring native plants like wild plums and blackberries, as well as innovative crops like goji and aronia berries. Production includes vegetables and aromatic herbs, with a focus on Jerusalem artichokes, known for their high inulin content. The farm also began experimenting with crops such as saffron and hemp.
In October 2015, the transformation lab was launched, and the first batches of dried products were produced. Committed to the philosophy of “Artisans of Taste,” the farm focuses on health-conscious foods. It became the first in Italy to process Jerusalem artichokes in a way that enhances their nutritional properties. In 2020, the farm ranked fourth in the national competition “Nuovi Fattori di Successo,” recognizing top-performing agricultural enterprises in Italy.
